Trust me, once you start making your own you will never want to buy store bought again! (yes, it’s that good!) Ingredients: 1 C of Raw (organic) Almonds soaked overnight 3.5 – 4 C Filtered water 2-3 Dates Either 1-2 Vanilla beans or 1-2 tsp of Vanilla Extract Dash of Himalayan Salt Process: Soak the almonds over night. Discard the water and rinse almonds. Add them with all the ingredients into a high speed blender. Blend on high (30 seconds to 1 min) so it’s a smooth creamy consistency. Pour the almond milk into a nut milk bag over a large bowl. Squeeze all the liquid out until dense chunks of the almond meal are left in the bag. I recently came back from a few weeks of teaching yoga in Costa Rica. I”ve been returning to this magical land for numerous years to inspire, invigorate, and restore my entire being. Disconnecting from the phone and internet and being fully present with nature, the lush tropical vegetation, abundance of fresh fruits and vegetables, the symphony of insects and animals, the cycles, the rhythms, the warmth of the sun, the cleansing waters, infinite stars, and true human connection is what draws me back to my essence. I always come home feeling my healthiest, in all ways, and with a newfound clarity of my life”s calling. In an effort to maintain this vibration, while we are in the final push through the end of winter here in New England, I”ve been cooking beautiful, nourishing meals inspired by my time in the jungle. One of those things was an absolutely divine, vegan, raw pie! I posted a picture of this raw pie on Facebook and it got such a wonderful response that I decided to make it a second time and actually write down the recipe (which I hardly do ~ and the perfect excuse to make it again). Here”s a picture of the first version. A few things to note: this pie has 2 layers of filling (as you can see in the picture) and each one, including the crust, needs time to set in either the refrigerator or freezer so make sure to build that time in when you are planning to make this (think the day before you want to serve it). You”ll also need to soak the cashews for the cashew cream. Ideally do this over night, but at least a couple of hours will be good. Pineapple & Citrus Dream Raw Pie Ingredients Pineapple, Lemon, Cashew Cream Layer 1 1/4 C soaked Cashews 1/4 C Water 1 C Pineapple chunks (either fresh or frozen) 1/2 Lemon juiced 3 T Maple Syrup pinch of Himalayan Salt (brings out flavor and adds essential minerals) Add all ingredients into a high speed blender – I love my Vitamix! – and blend until creamy. The cream should have a little bit of body to it. Put this in a bowl, cover, and place in the refrigerator to set for about an hour or so. Clean out blender online casino for the next steps (or you can use a food processor). Next, prepare the crust. Crust 1 C Walnuts 1/2 C Almond Meal 1/4 C Hemp Seed 5 Fresh pitted Dates 2 Tsp Vanilla 1/2-1 Tsp of Himalayan Salt (Start with less and add more as you desire. I like the saltiness in the crust to off set the sweetness of the casino filling). Add all ingredients into your Vitamix or food processor and blend. I kept the walnuts a little chunky because I like that texture since the rest of the pie is so silky smooth. You”ll probably have to scrape the sides many times and keep mixing to get the texture that you want. Spoon the nut mixture into a 10 inch tart pan and press firmly with your fingers until you have an even covering over the bottom of the pan. Recently coming off a cleanse and wanting a healthy, delicious, warm meal in the winter, this dish caught my eye however, I rarely follow recipes so I adapted this according to what I had in my refrigerator. I encourage you to do the same and have some fun exploring! Ingredients: 1C wild black rice ½ butternut squash, peeled, cubed 1-2 T coconut oil 1 leek, chopped up to the green (or green onions) ½ C pecans roughly chopped 2-3 radishes sliced 2 C of greens – kale, spinach, microgreens handful of cilantro, parsley pomegranate seeds (optional) Dressing: 1-2 T lemon juice (about ½ lemon juiced) 1 T maple syrup 2 T olive oil pinch of cayenne Sea salt to taste Wash and rinse the rice online casino and cook according to package. Toss peeled and cubed butternut squash in coconut oil until coated and add a little sea salt. Roast at 375 degrees for about 40 minutes (until soft but not mushy). While the rice and butternut squash are cooking, chop up the leek and saute in a wok or large skillet on medium-high heat in coconut oil for about 3-5 minutes. Add the pecans for another couple of minutes so they get a little toasted. Turn off heat and let sit until the squash and rice are done cooking. Dressing: in a small bowl add the lemon juice, maple syrup, olive oil, cayenne and sea salt and whisk until thoroughly mixed. Once butternut squash and rice are done cooking, add them to the wok along with the greens, radishes, and cilantro. Stir fry on medium-high heat stirring constantly until the greens are just slightly wilted. Add the dressing and then serve! Here it is, a project that has been in the works for (ahem) too long to disclose. Through the tedious process of learning to silence my inner perfectionist here is a labor-of-love, work-in-progress, online hub of my offerings, musings, and nuggets of information. So, what has been on my mind recently? The words offered by Kate Gray, Ed. M., Founder and CEO of Qi The Inner Gym, at the grand opening celebration of Qi. Her words are still echoing through my being, seeping in layer by layer to my core. When I arrived at the celebration, I was instantly awed by the beauty of the space, the community it attracted, and the many (much needed) services of healing and wellness that it will provide for the people of Boston and its surrounding region. Boston is a brilliant city, full of intelligence, history and its own understated style, however, it”s a city that has been pretty closed for a long time. As many newcomer friends have mentioned, it”s one of the hardest places to crack into the social fabric and create a solid community for yourself. You have to really dig and search to find its magical pockets. So, it was a breath of fresh air to walk into the welcoming space of Qi and feel as if I was at home. It”s amazing to see this sense of “opening” happening all over the city. People are connecting, sharing their dreams, supporting one another, and opening up to the potential that we all desire and strive to attain. Which leads me to share with you Kate”s four main points from her speech that evening. 1. Heaven is here on earth. Heaven is not a place up in the sky with fluffy white clouds and harps, and an old dude with a big white beard. Let go of the idea that it”s inaccessible, out there beyond your reach. We have a choice every day, every minute, to choose heaven or hell here on earth. Look around. Your friends, loved ones, and strangers alike are your angels. Love and beauty are everywhere when you are open to see it, to feel it. Magic lies within the subtleties of each moment. Heaven is here on earth, right here, right now. 2. It”s all about collaboration. Collaboration is the way of the future. Each of us has a very unique set of gifts to give to the world. When we are aware of our purpose and what our gift is we become incredibly powerful (caution! you will also become ridiculously happy and full of joy). By joining forces with others to combine our gifts, resources, talents, and skills we exponentially increase our power and impact on the world. Collaboration is progress. It”s happening everywhere. Pay attention to Synchronicity The world is an extension of you and when you experience synchronicity it is a reflection of how in touch you are with your own soul.
